4 tbsp olive oil
1 tsp mustard powder
1 tsp lemon zest
1 tbsp lemon juice
2 tbsp fresh parsley, finely chopped
2 green onions, finely chopped
1 large egg
1/2 tsp salt
1/4 tsp ground black pepper
4 lemon wedges, for serving

Instructions

Place the drained salmon into a large mixing bowl and check for any remaining bones.
Add the egg, mustard powder, lemon zest, lemon juice, salt, pepper, chopped parsley, and green onions to the bowl.
Mix everything together until well combined.
Shape the mixture into four equal-sized patties.
Heat the olive oil in a large skillet over medium heat.
Once the oil is hot, carefully place the patties into the skillet.
Cook for about 3-4 minutes on each side until they are golden brown and crispy.
Remove from the skillet and serve immediately with fresh lemon wedges.

Notes

Ensure the salmon is very thoroughly drained to prevent the patties from falling apart. If fresh parsley is unavailable, dried dill serves as an excellent aromatic substitute. These patties store well in an airtight container in the refrigerator and can be frozen for future quick lunches.
