A flavorful, high-protein meal made with roasted sweet potatoes, seasoned ground beef, creamy cottage cheese, and fresh avocado. This easy-to-make bowl is perfect for a quick lunch or dinner.

Ingredients

Sweet potatoes
Avocado oil spray
Salt
Paprika
Garlic powder
Chili powder
Onion powder
Ground beef (grass-fed, 90% lean or higher)
Cottage cheese (2% or full fat)
Avocado
Crushed red pepper
Hot honey

Instructions

Preheat oven to 400°F (200°C)
Chop 2 large sweet potatoes into ½-inch cubes
Toss cubes with avocado oil spray, salt (½ tsp), paprika (½ tsp), garlic powder (½ tsp), and mix well
Spread sweet potatoes on a baking sheet and roast for 20-25 minutes until tender
In a skillet, cook 1 lb ground beef over medium-high heat until browned
Season beef with salt (¾ tsp), paprika (1 tsp), garlic powder (1 tsp), chili powder (1 tsp), and onion powder (1 tsp)
Stir in 16 oz cottage cheese and crushed red pepper to taste, mixing until well combined
Assemble bowls with roasted sweet potatoes, seasoned beef, sliced avocado, and drizzle hot honey (5-7 min per serving)

Notes

Substitute sweet potatoes with Yukon Gold/red potatoes or roasted butternut squash
For vegetarian version: omit beef and increase beans/chickpeas for protein
Store leftovers in airtight containers up to 3 days
For gluten-free option, verify spice blends do not contain wheat
