1 can (15 oz) chickpeas, drained and rinsed
1 small onion, finely chopped
2 cloves garlic, minced
1/4 cup fresh parsley, chopped
1/4 cup fresh cilantro, chopped
Zest and juice of 1 lemon
1 teaspoon ground cumin
1/2 teaspoon paprika
Salt and pepper to taste
3/4 cup breadcrumbs (or gluten-free alternative)
1 egg, lightly beaten (or flax egg for vegan version)
Olive oil, for cooking
For the Yogurt Sauce: 1 cup plain酸奶 (Greek or regular)
1 clove garlic, minced
1 tablespoon lemon juice
Salt and pepper to taste
A sprinkle of fresh dill or mint (optional)

Instructions

Blend chickpeas, onion, garlic, parsley, cilantro, lemon zest/juice, cumin, paprika, salt, and pepper in a food processor until smooth.
Transfer mixture to a bowl, stir in breadcrumbs and egg. Mix until well combined.
Form into 12 evenly sized patties (adjust thickness as needed).
Heat olive oil in a skillet over medium-high heat. Cook patties 2-3 minutes per side until golden and crispy.
Meanwhile, whisk yogurt sauce ingredients together. Chill before serving.
Serve warm patties with yogurt sauce on the side.

Notes

For best results, refrigerate patty mixture 15-30 minutes before shaping to firm up.
Use panko for crunchier texture or almond flour for gluten-free/vegan option.
Store leftovers airtight in the fridge for up to 3 days.
