1 lb lean ground beef (90/10 or 93/7)
2 medium sweet potatoes, peeled and cubed into 1/2-inch pieces
2 tablespoons olive oil
1/2 teaspoon chili powder or cumin
1 packet taco seasoning
1/4 cup water or beef broth
1 can black beans, rinsed and drained
1 cup corn (canned or frozen)
2 cups cooked white or brown rice
1/2 cup sour cream or Greek yogurt
Juice of 1/2 to 1 lime
2 tablespoons fresh cilantro, chopped
Salt and black pepper to taste

Instructions

Preheat your oven to 400°F (200°C).
Toss the cubed sweet potatoes with 1 tablespoon of olive oil, salt, and pepper on a baking sheet; roast for 20-25 minutes until tender and caramelized.
While potatoes roast, heat the remaining tablespoon of olive oil in a large skillet over medium-high heat.
Add the ground beef to the skillet, browning it thoroughly and breaking it up with a spoon.
Stir in the taco seasoning, chili powder, and water or broth; simmer for 3-5 minutes until the liquid reduces and coats the meat.
In a small bowl, whisk together the sour cream, lime juice, and half of the fresh cilantro to create the crema.
Assemble the bowls by dividing the cooked rice, roasted sweet potatoes, seasoned beef, black beans, and corn among four bowls.
Drizzle with the lime crema and garnish with remaining fresh cilantro before serving.

Notes

Store leftovers in airtight containers in the refrigerator for up to 3 days. Use Greek yogurt instead of sour cream for a higher protein content. You can add extra toppings like sliced avocado, pickled red onions, or shredded monterey jack cheese as desired.
