1 lb tilapia fillets
3 tbsp butter
1 medium onion, finely diced
2 garlic cloves, minced
6 oz roasted peppers, chopped
6 oz roasted peppers, pureed
3/4 cup heavy cream
1/2 cup grated Parmesan cheese
Salt and pepper to taste
Freshly chopped parsley for garnish

Instructions

Pat the tilapia fillets dry with paper towels and season both sides with salt and pepper.
In a large skillet, melt 1 tablespoon of butter over medium-high heat and sear the tilapia fillets until cooked through, about 3-4 minutes per side; remove fish from skillet and set aside.
In the same skillet, melt the remaining 2 tablespoons of butter.
Add the diced onion and cook until softened, then add the minced garlic and sauté until fragrant.
Stir in the chopped and pureed roasted peppers, letting them cook for 2 minutes to meld the flavors.
Lower the heat, stir in the heavy cream and Parmesan cheese, simmering until the sauce thickens slightly.
Return the tilapia to the skillet, gently spooning the sauce over the fish to warm through.
