4 mini pizza crusts or naan rounds
8 oz brie cheese, sliced thin
1/2 cup dried cranberries
1/2 cup walnuts, toasted and chopped
1/4 cup honey
1 tsp red pepper flakes
2 tbsp olive oil
1 tsp fresh thyme leaves
Salt and black pepper to taste

Instructions

Preheat your oven to 400°F (200°C).
Brush the mini pizza crusts lightly with olive oil.
Arrange the thin slices of brie evenly across the four crusts.
Top the brie with dried cranberries and toasted walnuts.
Place pizzas on a baking sheet and bake for 10-12 minutes, or until the brie is melted and the edges are golden brown.
While the pizzas bake, whisk together the honey and red pepper flakes in a small bowl.
Remove from the oven, sprinkle with fresh thyme, and drizzle generously with the hot honey infusion.
Season with a pinch of salt and black pepper before serving.

Notes

Leftover brie rind is edible, so feel free to leave it on if you prefer. You can substitute walnuts with pecans or pine nuts, or swap cranberries for fresh figs to change the seasonal profile. If mini pizza crusts are difficult to find, pita bread or store-bought flatbread work perfectly.
