12 mini peppers
1 lb ground beef
1/2 tsp salt
1/2 tsp black pepper
1/2 tsp paprika
1 tsp Italian seasoning
1/2 tsp garlic powder
1 tsp ground cumin
1 small onion, grated
1 large egg white
1/2 cup shredded mozzarella

Instructions

Preheat your oven to 400°F (200°C).
Slice the mini peppers in half lengthwise and remove the seeds and membranes.
In a mixing bowl, combine the ground beef, salt, pepper, paprika, Italian seasoning, garlic powder, cumin, grated onion, and egg white.
Mix the ingredients thoroughly until well combined.
Stuff each pepper half with the beef mixture.
Arrange the peppers on a baking sheet lined with parchment paper.
Bake for 15-18 minutes until the beef is cooked through.
Remove from the oven, sprinkle the tops with shredded mozzarella, and return to the oven for 2 minutes to melt the cheese.

Notes

You can substitute 2 tsp of onion powder for fresh onion for a smoother texture. If grating fresh onion, freeze it for 15 minutes beforehand to make it easier to handle. Swap mozzarella for sharp cheddar for a bolder flavor profile.
