1 lb (450 g) smoked turkey kielbasa sausage, sliced into 1/2-inch half-moons
1 bag (32 oz / 900 g) frozen diced hash brown potatoes, thawed
1 can (10.5 oz / 295 g) cream of chicken soup
1 cup sour cream
2 cups shredded cheddar cheese, divided
1/2 cup chopped green onions
1/2 teaspoon garlic powder
1/2 teaspoon black pepper
1/2 teaspoon paprika
2 tablespoons butter, melted
1 cup crushed crackers (optional topping)

Instructions

Preheat your oven to 375°F (190°C) and lightly grease a 9×13 inch baking dish.
In a large mixing bowl, combine the condensed cream of chicken soup, sour cream, 1 cup of shredded cheddar cheese, garlic powder, black pepper, and paprika until smooth.
Add the thawed hash brown potatoes, sliced turkey kielbasa, and green onions to the sauce mixture and stir until evenly coated.
Spread the mixture into the prepared baking dish and smooth the top with a spatula.
If using, toss the crushed crackers with the melted butter and sprinkle over the top of the casserole.
Bake for 45 minutes, or until the casserole is bubbly and the edges are golden brown.
For an extra cheesy finish, sprinkle the remaining 1 cup of cheddar cheese over the top during the last 5 minutes of baking.

Notes

Substitute cream of chicken with cream of mushroom soup for an earthier flavor. Swap sour cream for plain Greek yogurt for a protein boost. Ensure hash browns are fully thawed to guarantee a perfect texture.
