Ingredients

Almond Flour – 2 1/2 cups (260 g)
Swerve Sweetener – 2/3 cup (121.33 g)
Baking Powder – 1 tsp
Salt – 1/2 tsp
Butter (unsalted) – 6 tbsp, melted
Egg – 1 large
Egg Yolk – 1 large
Lemon Zest – 1 tsp, freshly grated
Lemon Juice – 3 tbsp, freshly squeezed
Vanilla Extract – 1/2 tsp
Chopped Fresh Strawberries – 2/3 cup (110 g)
Strawberry Glaze:
Strawberries (medium) – 2
Lemon Juice – 1 tbsp
Powdered Swerve Sweetener – 2/3 cup (121.33 g)

Instructions

Preheat oven to 350°F (175°C)
Line an 8×8-inch baking pan with parchment paper
In a bowl, whisk almond flour, Swerve, baking powder, and salt
In a separate bowl, mix melted butter, egg, yolk, lemon zest, lemon juice, and vanilla
Combine wet and dry ingredients until smooth
Fold in chopped strawberries
Spread batter evenly into the prepared pan
Bake 30-35 minutes until golden and toothpick comes out clean
Cool completely in the pan
For glaze: blend strawberries, lemon juice, and powdered Swerve until smooth
Drizzle over cooled blondies and let set before cutting into squares
