4 small chicken breasts (boneless, skinless)
¾ cup broccoli florets (chopped, fresh or frozen, thawed)
½ cup cheddar cheese (shredded)
2 ounces cream cheese (softened)
2 teaspoons Cajun seasoning (adjust to taste)
1 tablespoon olive oil or butter (for greasing)
48 toothpicks (to secure chicken)

Instructions

Preheat oven to 375°F (190°C)
Cut a horizontal pocket into each chicken breast without cutting through
In a bowl, mix broccoli, cheddar, cream cheese, and 1 teaspoon Cajun seasoning
Spoon the mixture into each chicken pocket and secure with toothpicks
Place chicken in a baking dish, brush with olive oil/butter, and season remaining Cajun spice on top
Bake for 25-30 minutes until chicken is fully cooked
