4 chicken thighs, boneless and skinless
2 tablespoons jerk seasoning
1 tablespoon olive oil
1 mango, diced
2 cups cabbage, shredded
1 red bell pepper, sliced
1/4 cup cilantro, chopped
1/4 cup mayonnaise
2 tablespoons honey
1 lime, juiced
Salt and pepper to taste
Pat chicken thighs dry and season both sides with jerk seasoning.
Heat olive oil in a skillet over medium-high. Cook chicken for 5-7 minutes per side until golden and cooked through.
