Ingredients

Scale

1.25 lbs strip, sirloin, or flank steak, trimmed
1 tsp kosher salt
1/2 tsp black pepper
1 cup fresh parsley leaves, packed
3 garlic cloves, roughly chopped
2 tbsp apple cider vinegar (substitute for red wine vinegar)
2 tbsp fresh lemon juice
0.5 tsp crushed red pepper flakes
0.5 tsp kosher salt (for dressing)
0.25 tsp black pepper (for dressing)
0.25 cup extra virgin olive oil
1.5 cups mini cucumbers, diced
1.5 cups cherry tomatoes, halved
1 large avocado, sliced
0.25 cup red onion, slivered

Instructions

Season the steak generously with salt and pepper.
Heat a skillet over medium-high heat and sear steak to desired doneness, approximately 4-5 minutes per side for medium-rare.
Let the steak rest for at least 5-10 minutes before slicing against the grain.
While steak rests, combine parsley, garlic, vinegar, lemon juice, red pepper flakes, salt, and pepper in a food processor or blender.
Pulse until finely chopped, then slowly drizzle in the olive oil while pulsing to emulsify into a dressing.
In a large bowl, combine the cucumbers, tomatoes, and red onion.
Chop the rested steak into bite-sized pieces and add to the vegetable bowl.
Add the dressing and toss everything together until well-coated.
Top with fresh avocado slices just before serving.

Notes

Use apple cider vinegar as a non-alcoholic substitute for red wine vinegar. Store dressing in a sealed jar for up to 3 days. Use flank steak for the leanest protein option. Keep avocado separate if meal prepping to prevent browning.
