2 slices high-protein bread or whole grain bread
¾ cup low-fat cottage cheese
2 tablespoons liquid egg whites
½ cup part-skim shredded mozzarella cheese
10–12 slices turkey pepperoni, chopped
¼ cup sliced cherry tomatoes (red and yellow)
¼ cup diced bell peppers (green and red)
2 tablespoons sliced black olives
1 teaspoon olive oil (optional)
½ teaspoon Italian seasoning or dried oregano
¼ teaspoon garlic powder
Salt and freshly ground black pepper, to taste
Fresh basil or parsley (chopped, for garnish)
Preheat air fryer to 375°F (190°C)
Place bread slices in air fryer basket
