1 lb chicken breasts, pounded to even thickness
2 tbsp olive oil
2 tbsp fresh lime juice
1 tsp lime zest
1 tsp chili powder
1 tsp brown sugar
1 tsp smoked paprika
0.5 tsp ground cumin
0.5 tsp salt
0.5 tsp garlic powder
0.5 tsp onion powder
0.25 tsp chipotle chili powder
2 ripe avocados, diced
1 cup cherry tomatoes, halved
0.5 cup sweet corn kernels
0.25 cup red onion, finely diced
0.25 cup red bell pepper, diced
1 jalapeno, seeded and minced
0.25 cup fresh cilantro, chopped
1 clove garlic, minced
1 tbsp lime juice (for salsa)

Instructions

Whisk together the olive oil, lime juice, zest, and all rub spices in a bowl. Brush the mixture over the chicken breasts and let marinate for 5 minutes.
Heat a grill pan or large skillet over medium-high heat. Cook the chicken for 4-5 minutes per side until the internal temperature reaches 165°F and it is nicely browned.
While the chicken cooks, combine all avocado salsa ingredients in a mixing bowl and toss gently to incorporate.
Remove chicken from the heat and let rest for 3 minutes before slicing.
Top each piece of chicken with a generous scoop of the fresh avocado salsa and serve immediately.

Notes

Control the heat level of the salsa by removing or keeping the jalapeno seeds. If you prefer, swap the cherry tomatoes for chopped Roma tomatoes. Store leftover salsa in an airtight container for up to 24 hours (add avocado right before serving for best texture).
