Sweet, savory, and perfectly tender—this baked cod is coated in a simple honey marinade and comes together fast for an easy weeknight dinner.

  • 1/4 cup honey
  • 2 tablespoons olive oil
  • 3 cloves minced garlic
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 tablespoon lemon juice
  • 2 tablespoons fresh parsley

Instructions

  • Preheat your oven to 375°F (190°C) so it’s fully heated and ready for baking.
  • In a medium bowl, whisk together the 1/4 cup honey, 2 tablespoons olive oil, 3 cloves minced garlic, 1 teaspoon paprika, 1 teaspoon salt, 1/2 teaspoon pepper, and 1 tablespoon lemon juice. Mix for about 1–2 minutes until everything is fully combined and the marinade looks smooth and glossy.
  • Place the cod fillets in a baking dish in a single layer. Pour the marinade evenly over the fish, making sure each piece is well coated.
  • Let the cod marinate at room temperature for 10 minutes to allow the flavors to soak in.
  • Bake in the preheated oven for 12–15 minutes, or until the cod is opaque in the center and flakes easily with a fork.

 

  • Remove from the oven and sprinkle with 2 tablespoons fresh parsley before serving for a fresh, bright finish.
