1 pound ground turkey
1 can (15 ounces) black beans, drained and rinsed
1 small onion, finely chopped
2 cloves garlic, minced
1 can (14.5 ounces) diced tomatoes, drained
1 can (4 ounces) green chilies
1 tablespoon olive oil
2 teaspoons chili powder
1 teaspoon cumin
1 teaspoon smoked paprika
Salt and black pepper to taste
8 medium flour or corn tortillas
1 can (10 ounces) red or green enchilada sauce
1 1/2 cups shredded cheese (cheddar or Monterey Jack)
Fresh cilantro and lime wedges for garnish
