1 small yellow onion, finely chopped
4 cloves garlic, minced
1 (28 oz.) can diced tomatoes
1 tsp honey
3 Tbsp chopped fresh parsley
1 1/2 tsp dried oregano
1/4 tsp red pepper flakes
Salt and black pepper to taste
1 1/4 lbs large shrimp, peeled and deveined
5 oz. feta cheese, crumbled
2 Tbsp fresh mint, chopped
Lemon wedges for serving

Instructions

Heat the olive oil in a large skillet over medium heat.
Add the onion and cook until softened, about 5 minutes.
Stir in the garlic, red pepper flakes, and dried oregano, cooking for 1 minute until fragrant.
Pour in the diced tomatoes with their juices and add the honey; simmer for 8-10 minutes to thicken slightly.
Season with salt and pepper to taste.
Add the peeled and deveined shrimp to the skillet in an even layer.
Cook for 3-4 minutes until the shrimp are pink and just cooked through.
Remove from heat and stir in the fresh parsley.
Top with the crumbled feta cheese.
Serve immediately garnished with chopped mint and lemon wedges.

Ensure you are using high-quality canned tomatoes for the best flavor base. If using frozen shrimp, make sure they are completely thawed and patted dry with paper towels before adding to the skillet to prevent excess water in the sauce.
