2 large ripe avocados
2 cups cooked chicken breast, diced
1/2 to 1 cup cherry or grape tomatoes, halved
1/4 cup red onion, finely diced
1/4 cup celery, finely diced
1/4 cup red bell pepper, diced
2 tablespoons fresh cilantro, chopped
2 tablespoons lime juice
1/4 teaspoon garlic powder
Salt and black pepper to taste
Optional: 1/4 cup Greek yogurt for extra creaminess

Instructions

In a medium bowl, mash the ripe avocados with a fork until smooth or slightly chunky depending on your preference.
Add the lime juice, garlic powder, salt, and black pepper to the avocado mixture and stir well to combine.
Add the diced cooked chicken breast, tomatoes, red onion, celery, red bell pepper, and fresh cilantro to the bowl.
Gently fold all ingredients together until the chicken and vegetables are evenly coated with the avocado mixture.
If using Greek yogurt for extra creaminess, stir it in at this stage.
Taste and adjust seasoning with additional salt or lime juice as needed.
Serve immediately or store in an airtight container in the refrigerator for up to 2 days.

Notes

Use pre-cooked rotisserie chicken to reduce preparation time significantly. Swap cilantro for flat-leaf parsley if you prefer a different herbal flavor.
