4 salmon fillets (6 oz each), skin-on
3 tablespoons gochujang (Korean chili paste)
2 tablespoons soy sauce (or tamari)
1 tablespoon honey or maple syrup
1 tablespoon rice vinegar
2 cloves garlic, minced
1 teaspoon sesame oil
3 cups broccoli florets
2 medium carrots, sliced
2 green onions, sliced for garnish

Instructions

Preheat your oven to 400°F (200°C) and line a large sheet pan with parchment paper
In a small bowl, whisk together the gochujang, soy sauce, honey, rice vinegar, minced garlic, and sesame oil
Arrange the salmon fillets in the center of the sheet pan and spread the broccoli florets and carrot slices around them
Brush half of the glaze generously over the salmon fillets and drizzle the rest over the vegetables, tossing the veggies to coat
Roast in the center rack of the oven for 12-15 minutes or until the salmon is opaque and flakes easily with a fork
Remove from the oven, garnish with sliced green onions, and serve immediately

Notes
