3 medium zucchini, grated
1 tsp salt
2 large eggs
1/2 cup all-purpose flour
1/4 cup grated Parmesan cheese
2 cloves garlic, minced
1/2 tsp black pepper
1/2 tsp paprika
2–3 tbsp olive oil (for frying)
1 cup plain Greek yogurt
1 tbsp fresh lemon juice
1 tsp lemon zest
1 tbsp olive oil
1 small garlic clove, grated
Place grated zucchini in a colander, sprinkle with salt, and let sit for 10 minutes, then squeeze firmly to remove all excess moisture.
