4 salmon fillets, skin removed
1 lb large shrimp, peeled and deveined
2 tbsp olive oil
2 tbsp butter
4 cloves garlic, minced
3 cups fresh spinach
1 cup heavy cream
1/2 cup grated Parmesan cheese
1/2 cup mozzarella cheese
1/2 tsp paprika
1 tsp Italian seasoning
1/2 tsp salt
1/4 tsp black pepper
2 tbsp fresh parsley, chopped

Instructions

Preheat your oven to 375°F (190°C).
Use a sharp knife to cut a pocket into the side of each salmon fillet.
Season the salmon with half of the Italian seasoning, salt, and pepper.
In a pan over medium heat, sauté the spinach until wilted; stir in 1/4 cup mozzarella and 1/4 cup Parmesan to create the stuffing mixture.
Stuff each salmon pocket with the spinach-cheese blend and place in a baking dish.
In the same pan, melt butter and sauté shrimp with garlic until pink; remove shrimp and set aside.
Pour the heavy cream, remaining cheese, and spices into the pan to create the sauce; simmer for 3 minutes.
Place the cooked shrimp on top of the salmon fillets and pour the creamy sauce over the dish.
Bake for 15-20 minutes, or until the salmon flakes easily with a fork and the sauce is bubbly.
Garnish with fresh parsley and lemon slices before serving.
