1 teaspoon ground cumin

1/2 teaspoon freshly ground black pepper
1 1/2 pounds ground turkey
2 tablespoons fresh thyme, rosemary, or sage, chopped
1 15-ounce can unsweetened pumpkin purée
2 15-ounce cans beans (cannellini, navy, or pinto), drained
2 cups chicken broth
Kosher salt to taste
1/2 cup heavy whipping cream

Instructions

Heat olive oil in a large pot over medium heat.
Add the onion, carrots, and celery; sauté until softened, about 5–7 minutes.
Add the garlic, coriander, paprika, cumin, red pepper, and black pepper; cook for 1 minute until fragrant.
Add the ground turkey, breaking it up with a spoon, and cook until browned and fully cooked through.
Stir in the fresh herbs and pumpkin purée, mixing well to combine.
Add the drained beans and chicken broth; stir to combine and season with salt.
Reduce heat to low and simmer for 15–20 minutes to allow flavors to meld.
Remove from heat and stir in the heavy cream right before serving.
