A rich and satisfying Italian-inspired soup featuring halal sausage, tender cheese tortellini, and kale in a velvety chicken broth. Ready in 30 minutes with warm, kid-friendly flavors and optional spice.

Ingredients

1 pound ground halal chicken or beef sausage, hot or mild
1 small yellow onion, diced
3 cloves garlic, minced
3 Tablespoons all-purpose flour
1 teaspoon dried basil
½ teaspoon dried oregano
1 pinch cayenne pepper, optional
1 teaspoon hot sauce (alcohol-free), optional
½ teaspoon mustard powder
¼ teaspoon black pepper
1 pinch red pepper flakes
1 cup heavy cream
5 cups chicken broth
2 cups kale, chopped (stems removed)
2 cups tortellini, approximately 10 oz (refrigerated or frozen)
Salt, to taste

Instructions

Heat broth in a large pot over medium heat
Add diced onion and sauté until translucent
Stir in minced garlic and cook for 1 minute
Brown sausage in pot until no longer pink
Add flour and cook for 1-2 minutes to remove raw taste
Stir in basil, oregano, cayenne pepper, mustard powder, black pepper, and red pepper flakes
Gradually pour in heavy cream, stirring continuously
Bring to a gentle simmer until thickened
Add chopped kale and cook until wilted
Return tortellini to pot and cook until heated through
Season with salt and additional pepper if desired
Serve immediately

Notes

Use halal-certified chicken or beef sausage for dietary compliance
Reduce hot sauce/pepper flakes for milder flavor
Can substitute kale with spinach or Swiss chard
Store leftovers in airtight containers for up to 3 days
