5 green bell peppers, halved lengthwise and cleaned
1/2 pound ground beef (preferably lean)
1/2 pound ground turkey (substitute for Italian sausage)
1/2 cup finely chopped onion
1 cup pizza sauce
4 ounces softened cream cheese
1/2 cup shredded cheddar cheese
1 cup shredded mozzarella cheese
1/4 cup sliced black olives (optional)
1/4 cup vegan pepperoni slices (saathee or halal alternative)
Preheat oven to 375°F (190°C)
Bring a pot of water to boil, blanch bell peppers for 1-2 minutes to firm them, then drain
In a pan, cook ground beef and chopped onion over medium heat until browned; drain excess fat
