Ingredients

Scale

1 pound halal-certified smoked sausage, sliced
4 cups baby potatoes, halved or quartered
2 tablespoons olive oil
1 packet ranch seasoning mix
1 teaspoon garlic powder
1 teaspoon onion powder
1/2 teaspoon black pepper
1 1/2 cups shredded cheddar cheese
1/2 cup sour cream (optional, for serving)
Fresh parsley, chopped (optional, for garnish)

Instructions

Preheat your oven to 400°F (200°C) and line a large sheet pan with parchment paper.
In a large bowl, combine the halved potatoes and sliced smoked sausage.
Drizzle the olive oil over the mixture and toss to coat evenly.
Sprinkle the ranch seasoning mix, garlic powder, onion powder, and black pepper over the potatoes and sausage.
Toss everything thoroughly until the ingredients are well-coated.
Spread the mixture in a single layer on the prepared baking sheet.
Roast for 35 to 40 minutes, tossing halfway through, until the potatoes are tender and golden.
Remove from the oven, sprinkle the shredded cheddar cheese evenly over the top, and return to the oven for 2-3 minutes until the cheese is melted and bubbly.
Garnish with fresh parsley if desired and serve warm with a side of sour cream.

Notes

Use Yukon Gold or red potatoes as they hold their shape well during roasting. For extra texture, ensure the potatoes are dried well after washing before tossing with oil. You can customize the dish by adding bell peppers or broccoli florets during the last 20 minutes of cooking.
