This hearty casserole combines savory ground beef or turkey, thinly sliced potatoes, and fresh vegetables in a creamy, cheese-topped bake. 1 lb ground beef or ground turkey
1 onion, chopped
2 cloves garlic, minced
3 medium potatoes, thinly sliced
2 cups sliced carrots
1 can (15 oz) green beans, drained
1 can (10.5 oz) cream of mushroom soup
1/2 cup milk
Salt and black pepper, to taste
1 tsp Italian seasoning
1 cup shredded cheddar cheese

Instructions

Preheat your oven to 375°F (190°C).
In a large skillet, brown the ground meat with the chopped onion and minced garlic over medium-high heat until fully cooked. Drain excess fat.
In a small bowl, whisk together the cream of mushroom soup, milk, salt, pepper, and Italian seasoning.
In a greased 9×13 baking dish, layer the sliced potatoes, carrots, and the cooked meat mixture.
Pour the soup mixture evenly over the top of the ingredients.
Cover the baking dish tightly with aluminum foil and bake for 45 minutes.
Remove the foil, sprinkle the shredded cheddar cheese over the top, and bake for an additional 15 minutes or until potatoes are fork-tender and the cheese is melted and bubbly.

Notes

You can easily customize this dish by using frozen mixed vegetables instead of fresh carrots to save time. For a vegetarian variation, replace the meat with canned chickpeas or parsnips. Store leftovers in an airtight container in the refrigerator for up to 3 days.
