0.5 teaspoon garlic powder
0.5 teaspoon paprika
2 tablespoons butter
2 teaspoons all-purpose flour
1.5 cups milk
0.25 teaspoon salt (sauce)
0.25 teaspoon black pepper (sauce)
1.5 cups shredded cheddar cheese (sauce)
32 oz (907g) pre-made tater tots
0.5 cup shredded cheddar cheese (additional topping)

Instructions

Preheat oven to 375°F (190°C)
Heat a large skillet over medium-high heat and cook the ground beef until browned
Add diced onion, red bell pepper, and pickles; cook for 3-4 minutes until softened
Stir in ketchup, yellow mustard, salt, black pepper, garlic powder, and paprika; simmer for 5 minutes
In a separate saucepan, melt butter over medium heat and whisk in flour to form a roux
Gradually add milk, stirring constantly to dissolve flour (avoid lumps)
Continue heating until slightly thickened; stir in shredded cheddar cheese for sauce
Blend the cheese sauce into the beef mixture until fully combined
Transfer to a 9×13 inch baking dish and spread evenly
Top with half the shredded cheddar cheese, then evenly distribute tater tots over the surface
Bake for 30 minutes or until tater tots are golden and the dish is bubbly
