1 medium cauliflower, cut into bite-sized florets
2 tablespoons olive oil
1 teaspoon ground cumin
1 teaspoon paprika
1/2 teaspoon chili powder

810 corn or flour tortillas
1/2 cup sour cream or Greek yogurt
1/4 cup fresh cilantro, finely chopped
Juice of 1 lime
1 tablespoon olive oil (for the crema)

Instructions

Preheat your oven to 400°F (200°C).
In a large bowl, toss the cauliflower florets with 2 tablespoons of olive oil, cumin, paprika, chili powder, salt, and pepper until evenly coated.
Spread the cauliflower on a baking sheet in a single layer and roast for 20-25 minutes, or until tender and golden brown.
While the cauliflower roasts, whisk together the sour cream or Greek yogurt, chopped cilantro, lime juice, and 1 tablespoon of olive oil in a small bowl until smooth.
Warm the tortillas in a dry skillet or microwave for a few seconds.
Assemble the tacos by placing a portion of roasted cauliflower into each tortilla and drizzling with the prepared cilantro lime crema.

Notes
