Tender chicken breasts are coated in a tangy and sweet blueberry-thyme sauce for an elegant yet weeknight-friendly meal. This easy recipe delivers bold, complex flavor with simple ingredients.

4 boneless, skinless chicken breasts (about 68 ounces each)
Fresh blueberries (1 cup, rinsed gently)
Olive oil (2 tablespoons, plus more for searing)
Honey (1 tablespoon, or maple syrup as substitute)
Fresh thyme (2 tablespoons, chopped, or 1 tablespoon dried)
Garlic (2 cloves, minced, about 1 teaspoon)
Balsamic vinegar (1 tablespoon)
Salt (to taste, start with 1/2 teaspoon)
Black pepper, freshly ground (to taste)

Instructions

Preheat oven and skillet if desired, but primarily cook on stovetop
Season chicken with salt, pepper, and 1 tbsp thyme (or 1 tsp dried)
Heat 2 Tbsp olive oil in a large skillet over medium-high heat
Sear chicken 5-7 minutes per side until golden and cooked through
Remove chicken and set aside
In same skillet, add blueberries, honey, garlic, and vinegar
Cook 5 minutes until blueberries burst and sauce thickens
Stir in remaining thyme, return chicken to skillet
Spoon sauce over chicken, cook 2-3 minutes more
Serve with sauce, optionally over rice or quinoa

Notes

Use dried thyme if you don’t have fresh
Swap honey for maple syrup for a different sweetness
If you don’t have balsamic vinegar, use red wine vinegar
For gluten-free, ensure pre-minced garlic is certified gluten-free
