1 1/2 cups cooked brown lentils
1/2 red onion, finely chopped
3/4 cup bread crumbs
1/4 cup fresh chopped mint
1/4 cup fresh chopped parsley
2 tablespoons tomato paste
1 large egg
1/2 teaspoon salt
1/4 teaspoon black pepper
1/2 teaspoon paprika
1/2 teaspoon dried oregano
1 teaspoon soy sauce
Juice of 1/2 lemon
1/2 cup plain yogurt
1/4 cup cucumber, shredded
1 garlic clove, minced
1 tablespoon fresh dill

Instructions

Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
In a large bowl, mash about half of the lentils with a fork to help bind the meatballs.
Add the remaining lentils, onion, bread crumbs, herbs, tomato paste, egg, spices, soy sauce, and lemon juice to the bowl and mix until well combined.
Shape the mixture into golf-ball-sized spheres and place them on the prepared baking sheet.
Bake for 30-35 minutes, turning halfway through, until golden and firm.
While the meatballs bake, whisk together the yogurt, cucumber, garlic, remaining lemon juice, and dill to make the tzatziki.
Serve the warm meatballs with the chilled tzatziki sauce.

Notes

Use canned lentils for convenience, ensuring they are well-drained. Gluten-free bread crumbs can be substituted if needed. Keep leftovers in an airtight container for up to 3 days in the refrigerator.
