Ingredients
2 boneless, skinless chicken breasts, sliced into strips
8 ounces fettuccine pasta
2 tablespoons olive oil
2 tablespoons Cajun seasoning
1 small onion, diced
2 cloves garlic, minced
1 red bell pepper, thinly sliced
1 cup heavy cream
½ cup freshly grated Parmesan cheese
Salt and pepper, to taste
Fresh parsley, for garnish (optional)
Instructions
1. Bring a large pot of salted water to a boil. Cook fettuccine until al dente. Drain and set aside.
2. Season chicken strips with Cajun seasoning.
3. Heat olive oil in a large skillet over medium-high heat. Add chicken and cook until golden and cooked through, about 5–6 minutes. Remove from skillet and set aside.
4. In the same skillet, sauté onion, garlic, and bell pepper for about 4 minutes until tender.
5. Lower heat and add heavy cream. Stir to combine and simmer for 2–3 minutes.
6. Return chicken to the skillet, add pasta, and toss to coat in sauce.
7. Stir in Parmesan cheese until melted and creamy.
8. Season with salt and pepper. Garnish with parsley and serve hot.
Notes
Use whole wheat or gluten-free pasta for a lighter option.
Coconut milk or almond milk can replace cream for a dairy-free twist.
Add spinach, mushrooms, or cherry tomatoes for more veggies.
Adjust spice level by increasing or decreasing Cajun seasoning.
