Description
This creamy Crockpot Chicken Pasta recipe features tender shredded chicken in a dreamy garlic-herb cream cheese sauce, tossed with pasta and finished with parmesan. The perfect cozy slow cooker dinner with almost no effort.
Ingredients
3 large skinless chicken breasts
8 oz (225g) full-fat cream cheese
1 tbsp Dijon mustard
2 tsp garlic powder
2 tsp onion powder
2 tsp Italian herbs
1 tsp salt
½ tsp chili flakes
¼ tsp ground white pepper (or black)
10.5 oz (300g) dried pasta, cooked separately
¼ cup (60 ml) reserved pasta water (if needed)
½ cup (50g) grated parmesan cheese + extra for topping
Flat-leaf parsley, chopped (optional)
Salt and pepper, to taste
Instructions
1. Place chicken breasts in the slow cooker.
2. Sprinkle with garlic powder, onion powder, Italian herbs, salt, chili flakes, and pepper. Add Dijon mustard and cream cheese on top.
3. Cover and cook on HIGH for 3 hours or LOW for 5 hours.
4. Once done, shred chicken directly in the slow cooker using two forks.
5. Cook pasta separately until al dente, reserving ¼ cup of pasta water.
6. Add pasta to the slow cooker and stir to combine with the creamy chicken. Add a splash of reserved pasta water if needed.
7. Stir in parmesan cheese until melted and smooth.
8. Taste and adjust seasoning. Garnish with chopped parsley and extra parmesan before serving.
Notes
Use sturdy pasta shapes like penne, rigatoni, or fusilli for best texture.
Dijon adds great flavor depth—don’t skip it!
Loosen thick sauce with a splash of milk, cream, or pasta water.
Add veggies like spinach or peas toward the end for more nutrition.
