This creamy Parmesan Italian sausage ditalini soup is rich, comforting, and packed with flavor. It’s the ultimate cozy one-pot meal for chilly nights.
Ingredients
1 lb Italian sausage, casings removed
1 tbsp olive oil
1 small onion, chopped
2 cloves garlic, minced
1 can (14.5 oz) diced tomatoes
2 quarts chicken stock
½ cup heavy cream
1 cup ditalini pasta
½ cup Parmesan cheese, grated
½ tsp dried basil
½ tsp dried oregano
Salt and pepper, to taste
Fresh parsley, for garnish
Instructions
1. Heat olive oil in a large pot over medium heat. Add sausage and cook until browned, breaking it up with a spoon. Remove and set aside.
2. In the same pot, sauté onion until soft (about 3–4 minutes). Add garlic and stir until fragrant (30 seconds).
3. Add diced tomatoes, chicken stock, basil, and oregano. Return sausage to pot. Simmer for 10 minutes.
4. Stir in ditalini pasta and cook until al dente, about 8–10 minutes.
5. Lower heat. Add heavy cream and Parmesan, stirring until melted and creamy.
6. Season with salt and pepper. Garnish with parsley and extra Parmesan if desired. Serve hot.
Notes
Use high-quality Italian sausage for the best flavor.
Don’t overcook the pasta—it keeps cooking in the hot broth.
Add baby spinach or kale at the end for a healthy twist.
