Ingredients
1 lb ground beef (80/20 recommended)
1 cup elbow macaroni
1 small onion, diced
1 carrot, diced
2 celery stalks, diced
3 cloves garlic, minced
4 cups chicken broth
2 tbsp all-purpose flour
1 cup heavy cream
2 cups sharp cheddar cheese, shredded
1/2 tsp oregano
1/2 tsp thyme
Salt and pepper to taste
Optional toppings: croutons, green onions, sour cream
Instructions
1. Brown the ground beef in a large pot over medium heat. Season with salt, pepper, oregano, and thyme. Remove and set aside.
2. In the same pot, sauté onion, carrot, and celery until softened. Add garlic and cook for another minute.
3. Stir in flour to form a roux. Gradually pour in chicken broth while stirring to avoid lumps. Simmer for 5 minutes.
4. Add macaroni and cook until al dente, about 8–10 minutes. Stir occasionally.
5. Lower heat and stir in heavy cream and shredded cheddar cheese. Mix until smooth and creamy.
6. Return the beef to the pot. Stir well. Adjust seasoning and serve hot with your favorite toppings.
